As far as I can tell, it makes no real difference exactly where the worm is, it appears to be able to float either way by some amount. I guess the only reason I can see for it having adjustments both sides is due to the tight bearing fits - I assume tightening one side with the other loose would press the 'tightened' side on further, and simultaneously pull the whole worm assembly out of the other bearing a bit? So I guess, as far as I can tell, yes I can lock one side and adjust the other, and just whack it with a dead blow if I overdo it.

Along the same lines as the last idea in your first post, but thread it to replace one of the lock nuts and have it bottom against the right hand side of the worm part.
If you are worried about it coming undone I have a more complicated idea, but it requires modding the part by machining some sort of hirth joint/dog clutch in the end of your part and making the above "nut" in at least two pieces.
