Cooking with rice flour
This really is off topic...
My wife has some friends coming around this weekend who medically require a gluten free diet. Last time I tried cooking with rice flour rather than wheat flour in some scones, they did not rise at all. Anyone cook with rice flour and can tell me what I should be doing to get a result close to that with wheat flour?

No nothing about the cooking, can't they supply their own dietary requirements.

Rice flour is heavy, in a similar situation (I have inlaws with the full spectrum of dietary strangeness) I bought a mixed gluten free flour which was tapioca, corn and besan I think, it raised normally. I also threw in some almond meal to hold moisture. With that the stuff would rise a bit, still not as much as normal.

My wife is an excellent cook so I asked her.
She said she has not dealt with gluten free diets.
As I would do, she looked in her iPad and immediately found recipes.
Comparing an ordinary flour based recipes to the rice flour recipes she noted that the rice flour recipe called for a lot more baking powder. Its like 2 teaspoons normal recipe to 5 in rice flour.
It bears out what Caskwarrior said.

I had a look on the web but did not think of comparing recipes (although I doubt I would know what I'm looking at anyway).

I think you might need to find a different flour, rice doesn't tend to rise.
I've seen many GF baked goods that use tapioca flour.
This might sound crazy, but look up recipes for Passover cakes and you'll get all sorts of stuff. We're not allowed to eat anything that's risen during the week of Passover (which we're in the middle of now) so we've gotten quite creative over the centuries baking without wheat.

Can't help directly with the rice flour question, but if you just wanted something easy to make for afternoon tea etc I do know that Coles has some yummy gluten free chocolate brownie mix in a packet.
We've made it a couple of times for a coeliac friend of ours and its a good standby to have in the cupboard for a dessert (with some fresh cream) when going around to their place.
Caution: It may be addictive and its not calorie/fat free. Use with caution!!
