I may be a bit wrong in the head, but aren't there 4 wires running from your 3 phase plug?
If there are, one of them will be neutral and the other 3 will be entirely conventional 240VAC supplies, with only phase timing differentiating them from each other.

Not wrong in the head, just slightly incorrect from a safety point of view.
Here are the three phase cabling options in a convenient table of increasing safety:

    # wires cable type use comment
    3 rubber
    red/black/white
    Non-earthed 3 ø. Rare. Old. UNSAFE*
    4 4C Non-earthed 3 ø with neutral UNSAFE*
    4 3C+E Earthed 3 ø. Delta-wired motors Motor vibration
    5 4C+E Earthed 3 ø with neutral. Star-wired motors

    * I suspect that any form of non-bonded three phase, even if double-insulated, is illegal in Australia?

My Hercus is currently connected 3C+E.

My 3 phase circuits have no safety switch, so I could break the law and use the earth wire as a low current neutral for a small transformer or PSU, but I think it creates earth potential problems.

(there is meant to be only one bond from the property's earth to the neutral link, at the main switchboard or fusebox. If you draw any current between earth and any of the phases, it creates a voltage between the earths in that property, which creates a potential shock situation)

Thanks for clearing that up. I forgot the earth.
