Could u perhaps use the .9 setting and actually use .8 wire and dial it in for more heat input?

Definitely not. Trying to do that would lead to an excess voltage arc condition. Synergic machines rely on being fed the correct information regarding wire diameter so that they can calculate the correct feed rate to give a stable arc.
I couldn't help but notice that the welds produced in the youtube video sat up like pimples on a pumpkin, suggesting poor tuning of the arc and/or lack of power for the material being welded. The material wasn't exactly thick either.
