Good point Jordan - I just recalled when I was a teenager we had a school trip from Melbourne to Fraser Island and one of the staff was a grizzly old ex-WWII commando (that was in 1977 when such characters still existed - I found him a bit intimidating to be honest) - anyway the Landrover broke down on Fraser Island (or the staff were bored and wanted something to do, I never quite knew), so he rigged up a tripod from bush poles and rope, and they had that engine out messing around with it in no time. But granted that was a tripod, and a gin pole is a bit different.
I found this nice writeup on the web - not a three-pole type (can you find a web pic of what you have in mind?) - but nice and low tech all the same:
Heron of Alexandria and the Gin Pole | Make:
Generally speaking I think you are onto something with gin poles as a solution for trailer flipping.

Jordan mate what you discribe is "sheer legs".
But yes in the not too distant past "gin poles", "Jirries", "sheer legs" and "tripods" where used to do many lifting tasks.
The workshop maths and correct practice was still detailed in the NSW government published "guide for Riggers" still in print in the 90's.
Though pretty much forgotten and frowned upon in modern worksites ...... they still work just fine if properly constructed.

As for this welding nuts on U bolts ....... serioulsy I don't believe there is a reasnable excuse for it.
IF the nuts are welded, it is not possible to re-tension the U bolts ...... which is probably not a bad idea after a while.
best option is .... forget spring washers ......fit proper hard high tensile washers ..... fllow that with high tensile nuts and nyloc nuts.
Not that the U bolts are proper high tension material.
AND yes these U bolts need to be done up tight ....... failure to do so is a cause of spring failure.
the axle and the spring pack needs to be pulled up tight so the spring pack does not move on the axle AT ALL .... and thet the spring pack is properly consolidated at its centre.
